Ingredients:

  • 1 1/2 cups vegetable oil
  • 4 eggs
  • 2 cups sifted flour
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 lb confectioners' sugar
  • 1/4 lb butter

Directions:

  1. Cake.
  2. Combine Sugar and Oil.
  3. Add Eggs and beat until well mixed.
  4. Mix in Flour, Cinnamon, Baking Soda & Salt.
  5. Slowly mix in Carrots & Nuts.
  6. Pour into a 9 x 13 pan and bake at 325 degrees for 50 - 60 minutes.
  7. Cool Before Frosting.
  8. Frosting.
  9. Soften Butter.
  10. Combine Cream Cheese, Confectioners Sugar, Butter, Coconut and Vanilla Extract.
  11. Beat and apply to cooled caked.
  12. Apply to Cooled Cake.
