90 Minute Soft Pretzels

Ingredients:

  • 3 1/2 cups all-purpose flour , unsifted
  • 2 tbsp sugar
  • 1 tsp table salt
  • 1 (1/4 oz) package active dry yeast
  • 1 cup water
  • 1 tbsp margarine
  • 1 tbsp water
  • 1 tbsp kosher salt

Directions:

  1. Mix 1 cup flour, sugar, salt and undissolved yeast.
  2. Heat 1 cup water and margarine to 120-130 degrees.
  3. Gradually add to dry ingredients and beat 2 minutes at medium speed of mixer.
  4. Add 1/2 cup flour, beat at high speed 2 minutes.
  5. Stir in enough additional flour to make a soft dough.
  6. On floured board, knead 5 minutes.
  7. Set in greased bowl, turn to grease top, cover and let rise in a warm place for 40 minutes.
  8. Preheat oven to 375.
  9. Divide dough into equal pieces.
  10. Roll into ropes, shape into pretzels.
  11. Place on greased baking sheets, cover and let rest 5 minutes.
  12. Mix egg yolk and 1 tablespoon of water, brush on pretzels.
  13. Sprinkle with kosher salt.
  14. Bake 15 minutes.
