Zwiebelbrotchen Onion Rolls

Ingredients:

  • 1 tbsp sesame oil
  • 3 tsp yeast
  • 50 ml water
  • 2 tbsp sugar
  • 2 tbsp butter
  • 700 g flour

Directions:

  1. Saute onions in sesame oil until golden.
  2. Proof yeast in warm water with sugar.
  3. Scald milk; add butter; add the yeast mixture when warm.
  4. Add flour and celery salt.
  5. Knead; add onions and oil; knead until smooth.
  6. Put in greased bowl.
  7. Cover; let rise until doubled.
  8. Form into rolls.
  9. Put on greased cookie sheet; let rise until doubled.
  10. Mix 1 cup water wth 1 teaspoon baking soda; this mixture is usually used on soft pretzels to give brown color; brush rolls.
  11. Preheat oven to 400 degrees Fahrenheit.
  12. Brush rolls a second time after 30 minutes rising.
  13. Bake 15 minutes or until done.
  14. One recipe says 15 minutes; one says 35 minutes.
