Ingredients:

  • 3 eggs
  • 1 1/2 cups sugar
  • 3 tsp vanilla
  • 3 cups flour
  • 1 tsp salt
  • 3 tsp cinnamon
  • 1/4 tsp baking powder

Directions:

  1. Beat eggs, add sugar, oil and zucchini
  2. Add dry ingredients
  3. Add vanilla and nuts
  4. Pour into two large (or 3 small) greased bread pans
  5. Bake at 350 for 60 min.
