Yo Yo Biscuits With Lemon Icing Filling

Ingredients:

Directions:

  1. Preheat oven to 180 C (355 F)
  2. Place butter, sugar and vanilla in bowl of electric mixer and beat for 8 - 10 minutes or until creamy and pale.
  3. Add flour and beat until smooth dough forms.
  4. Roll teaspoons of mixture into balls, place on prepared baking tray and press with a fork.
  5. Bake for 8 - 10 minutes, cool on wire racks.
  6. ICING
  7. Mix all ingredients until smooth, Spread mixture on the base of half the biscuits and sandwich together with the remaining halves.
  8. Enjoy!
