Ingredients:

Directions:

  1. Preheat oven to 400 degrees.
  2. Cut squash in half lengthwise.
  3. Drop halves in boiling water and boil for 7 minutes.
  4. Remove from water.
  5. Allow to rest until cool enough to handle.
  6. With a spoon, scrape the middle of the squash out, leaving a shell about 1/4 inch thick.
  7. Set aside the shells.
  8. Finely chop scooped out middles.
  9. Heat a skillet and spray with cooking spray.
  10. Saute chopped squash, onion, basil and garlic until onion is soft.
  11. Season with salt and pepper.
  12. Whisk milk and flour together.
  13. Slowly add small amounts of milk to the veggies while stirring.
  14. Bring mixture just to a boil.
  15. Add cheese and 1/2 cup bread crumbs, stirring the whole time.
  16. Mixture should be semi thick, almost crumbly.
  17. If it is too thick or too thin, add milk or bread crumbs accordingly.
  18. Re-season if needed.
  19. Stuff the shells with this mixture, sprinkle with remaining bread crumbs and dot with butter.
  20. Bake in oven for 10-20 minutes or until bread crumbs are golden brown.
