Whole Grain Vegetable Pilaf

Ingredients:

Directions:

  1. In a medium saucepan bring water and bouillon cubes to boiling, stirring till dissolved.
  2. Stir in barley, rice, oregano and pepper.
  3. Bring to boiling; reduce heat.
  4. Cover and simmer for 45 mins.
  5. Or until grains are tender.
  6. Meanwhile, in another medium saucepan, cook beans, covered, in 1/2 cup boiling water for 5 mins.
  7. Add carrot, celery, and onion.
  8. Cook, covered, 5 mins.
  9. More or till vegs.
  10. Are tender.
  11. Drain.
  12. Spoon barley mixture and vegs.
  13. Into a 2 qt.
  14. Casserole.
  15. Bake, covered, in a 350* oven for 15 mins.
  16. Sprinkle with cheese and paprika.
  17. Bake, uncovered, 3 to 5 minutes more or till cheese melts and mixture is heated through.
  18. Makes 6 to 8 servings.
