Ingredients:

  • 1 cup flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup butter
  • 1 cup suagr
  • 2 egg yolks well-beaen
  • 1/2 cup hot water
  • 1 tsp vanilla
  • 2 egg whites stiffly beaten

Directions:

  1. Mix and sift flour, baking pwd., and salt. Combine brown sugar and butter in 8 -inch frying pan and stir over low heat unil thoroughly blended. Arrange fruit in brown sugar mixture. (Place a cherry in center of pineapple ring, if using pineapple) Stir sugar slowly into well-beaten egg yolks, add hot water slowly and beat well. Add vanilla and dry ingredients. Fold in stiffly beaten egg whites. Pour batter carefully over fruit. Bake 350 for 50 minutes, While hot, invert on serving platter and let stand 1 minute before loosening from pan.
