Triangle Caramel Freezer Cheesecake

Ingredients:

  • 125 ml butter (1/2 cup)
  • 90 ml castor sugar (1/4 cup + 2 heaped tbsp)
  • 250 ml smooth cream cheese (1 cup)
  • 10 ml caramel essence (2 tsp)
  • 1 packet tennisbiscuits ( if you don' get this, any square, sweet biscuit)
  • 125 ml caramel condenced milk (1/2 cup) optional
  • 150 ml sugar (1/2 cup +2 tbsp)
  • 125 ml water (1/2 cup)
  • 62,5 ml cocoa powder (1/4 cup )
  • 125 g butter, cut into blocks (125 ml ; 1/2 cup)

Directions:

  1. Beat castor sugar and butter together.
  2. Add the egg, cheese and caramel condeced milk and essence.
  3. Cut a square of foil.
  4. Place 3 rows of 6 tennis biscuits each close together on the foil.
  5. Put the cream cheese mixture very carefully on top.
  6. Use everything.
  7. Place cherries or grated chocolate on the middle row of biscuits on top of the mixture.
  8. Take the long sides of the foil and carefully bring the ends together so that it can form a triangle.
  9. Tightly fold over the two edges on top of the triangle formed cake.
  10. Close the ends aswell.
  11. Place in freezer overnight.
  12. Chocolate covering:
  13. Heat up the sugar, water, chocolate and cocoa in a saucepan.
  14. Stir in the butter until everything is smooth.
  15. Place in freezer until it starts to thicken.
  16. Take the cake out of the freezer and open the foil.
  17. Carefully put the chocolate over.
  18. Place back in freezer until everything is frozen.
  19. Cover again with the foil.
  20. Freeze until you need it and cut into pieces.
  21. Can be frozen for up to 3 months.
