Ingredients:

  • 8 large sausages
  • 285 ml milk
  • 1 pinch salt
  • 3 eggs

Directions:

  1. Mix the batter ingredients together and put to one side. You can add herbs such as thyme or rosemary to the batter if you wish.
  2. Put a little sunflower oil in a baking tray, then place on the middle shelf of your oven set to it's highest temperature. Add the sausages and allow them to colour slightly, this will take 10 mins or so.
  3. At this point, take the tin out of the oven and pour the batter over the sausages. Don't open the oven door for at least 20 minutes but keep an eye on your toad after this point. It is cooked when golden brown and crisp.
  4. The secret to a good toad in the hole is a very hot pan when you pour in the batter.
  5. I have made this often with low calorie sausages to lower the calories and it tastes wonderful. I serve it with mashed potatoes, any vegetables you like and gravy.
