Ingredients:

  • 2 tbsp olive oil
  • 1 1/2 cups pearled barley
  • 2 tsp thyme

Directions:

  1. Brown grain in olive oil till lightly toasted (about 10 mns.) Add onion and thyme sprigs & cook over low heat, stirring, until the onion is softened, about 5 mns. Add water or broth (amt depends on grain) and bring to boil. Cover & cook over very low heat until the water is absorbed and the grains are tender. Fluff the grain & discard the sprigs. Season with salt and serve.
  2. Pearled Barley 3 c water 25 mins
  3. Farro 3 c water 25 mins
  4. Short grain brown rice 2 3/4 c water 35 mins
  5. Spelt 4 c water 1 hr 25 mins
  6. Wheat Berries 5 c water 2 hr
