The Spirit Of Apple Prune Pancake

Ingredients:

  • filling
  • boiled rosehip tea herbs (save the herb contents from your cuppa)
  • 1/2 apple cut into quarter slices
  • 1/2 cup water
  • 1/2 cup soy drink
  • approx 1/2 cup gluten free sr flour ( lighter , fluffier and healthier than wheat flour)
  • 1/2 tbsp peanut oil

Directions:

  1. FILLING
  2. Stew apple and prunes until apples are semi soft (3 mins)
  3. 3 tablespoons fruity berry soy yogurt (or your choice)
  4. PANCAKE
  5. Pour mixture into hot frying pan
  6. Put lid on so top gets firm bubbles and is half cooked.
  7. Turn pancake over after bottom is golden brown 3 mins
  8. Cook for a further 2 minutes.
  9. Place the fruit filling onto the whole pancake.
  10. Place the yogurt onto 1/2 of the pancake.
  11. Fold in half.
  12. Sprinkle icing sugar on top and serve. Enjoy:)
