Sweet Butternut Squash

Ingredients:

  • 1 large butternut squash , quartered lengthwise
  • 1/4 cup packed brown sugar
  • 1/4 cup honey
  • 1/2 cup walnut pieces
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg

Directions:

  1. Preheat oven to 350 degrees.
  2. Scoop seeds out of the squash.
  3. Arrange pieces, cut-side-down, in a large baking dish.
  4. Pour hot water in the dish to a depth of about 1/4 inch.
  5. Bake squash uncovered for 50 to 60 minutes or until tender.
  6. Remove from oven, cool slightly and then remove and discard skin.
  7. N a medium bowl, lightly mash squash.
  8. Stir in brown sugar.
  9. Pour into an 8-by-8-inch baking dish.
  10. Stir together butter, honey, walnut pieces, cinnamon, cloves and nutmeg.
  11. Pour mixture over squash.
  12. Bake uncovered for 15 to 20 minutes or until hot.
