Super Easy Tangy Roasted Pork Loin

Ingredients:

  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp thyme
  • 1/3 cup dijon mustard
  • 2 tbsp honey

Directions:

  1. Preheat oven to 350.
  2. Place pork in a roasting pan and sprinkle all sides with the salt, pepper and thyme.
  3. Mix Dijon, pineapple preserves and honey and pour over the pork.
  4. Loosely cover and roast for about 60 minutes, (basting with sauce every 20 minutes) or until internal temp reaches 160°F.
  5. If you're using tenderloin, it will cook quicker.
