Ingredients:

Directions:

  1. Prepare 1 cup of brown rice as normal
  2. Brown 1 lb of ground beef, and drain fat
  3. Add to the ground beef: canned tomatoes, onion, garlic, salt and pepper-simmer
  4. Mix prepared rice and beef mixture
  5. Cut bell peppers length-wise in half (scoop out seeds)
  6. Place bell pepper halves in baking dish and scoop meat/rice mixture into peppers
  7. Bake at 350 for approximately 1 hour or until peppers cooked as desired
