Stuffed Baked Sweet Potatoes

Ingredients:

Directions:

  1. Preheat oven to 450.
  2. Bake sweet potatoes for 35 minutes.
  3. Blanch broccoli in boiling water for 4 minutes.
  4. Remove sausage from casing and saute till cooked through crumbling as you go.
  5. Add onion and garlic to pan and cook till onion is tender.
  6. Cut open each potato and flush the inside with a fork.
  7. Top each potato with a pad of butter, chopped spinach, broccoli, sausage mixture and cheese.
  8. Put back in oven and bake until cheese is melted.
  9. Top with sour cream if desired.
  10. Serve Immediately.
