Strawberry Bread

Ingredients:

  • 4-5 cups of slicked fresh strawberries or (2) 10oz. packages frozen strawberries.
  • 4 eggs
  • 3 cups flour
  • 1 tbsp. cinnamon
  • 1 tsp salt
  • 1 1/4 cup vegetable oil
  • 2 cups sugar
  • 1 cup chopped walnuts (optional)

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease and flour 2 loaf pans or a 9x13in cake pan.
  3. In a medium bowl, stir together strawberries, eggs and oil.
  4. In a large bowl, blend together all dry ingredients (including nuts).
  5. Stir strawberry mixture into dry mixture.
  6. Put into loaf or cake pan(s)
  7. Bake for 1 hour or until toothpick comes out clean.
