Stonyfield's Zucchini Bread

Ingredients:

  • 3 eggs
  • 2 cups sugar
  • 1/3 cup oil
  • 2 tsp cinnamon
  • 3 cups flour
  • 1 tsp salt
  • 1 tbsp baking soda
  • 1/2 tbsp baking powder

Directions:

  1. Preheat oven to 400 degrees.
  2. Beat eggs until foamy, then add sugar, oil, yogurt, cinnamon and zucchini and mix well.
  3. In a separate bowl, sift together flour, salt, baking soda and baking powder.
  4. Add dry ingredients slowly into yogurt mixture and mix until moist.
  5. Pour into two greased and floured 9x5x13-inch loaf pans.
  6. Bake for 40-45 minutes. Loaves should be golden brown on top when done.
