Spinach Fetta Triangles

Ingredients:

  1. Remove spinach ribs, dice spinach and simmer in a saucepan of water for about 10 minutes.
  2. Meanwhile, saute onion and garlic in oil in a frypan for a few minutes, add curry powder and stir for a further minute. Add spinach and fetta, remove from heat and season with salt and pepper.
  3. Taking 5 sheets of filo, cut each sheet into thirds lengthways. Butter each strip, add a heaped teaspoon of filling on one end and fold up in triangular way. Continue buttering strips until you run out of filling. Place triangles on oiled tray and bake in a moderate oven 180C for 20 minutes or until browned.
  4. Makes 12-15.
