Spinach Feta Puff Quiche

Ingredients:

Directions:

  1. Saute onion in butter until translucent
  2. Add herbs and saute until wilted
  3. In large bowl, combine onion and herb mixture with spinach, lemon juice, milk, cheeses and seasonings
  4. Mix well
  5. Separate eggs, stir yoks into spinach mixture
  6. Beat whites until stiff peaks are formed and gently fold into spinach mixture
  7. Pour into pie shell and bake at 325 degrees for 35-40 minutes or until quiche is puffed and lightly browned
