Southern Peach Lasagna

Ingredients:

Directions:

  1. Heat oven to 350 degrees F
  2. PEACH LAYERS
  3. Peal and cut them into approximately 1/4 inch wedges
  4. Toss in bowl with lemon rind and juice and 3/4 cup sugar
  5. BREAD LAYERS
  6. Melt 3 tablespoons butter in a large skillet and lay in half the bread slices.
  7. Brown lightly on one side, turn and brown the other side.
  8. Repeat wit remaining butter and bread
  9. When all are done, sprinkle with 1 1/2 tablespoons sugar
  10. Line the bottom of an ungreased shallow baking dish(8x10in)
  11. With half the bread slices; they should just cover the bottom
  12. Spoon half the peaches and half their juices on top.
  13. Repeat to make another layer of bread, peaches & juice
  14. TOPPING
  15. Toss together flour, sugar, brown sugar cinnamon & salt
  16. Cut butter into small cubes and mix them with the dry ingredients, using your fingertips of a pastry cutter to incorporate the butter but not too much.
  17. Leave small pieces of butter throughout .
  18. Fold in the chopped almonds
  19. Sprinkle topping over lasagna
  20. Bake 50 minutes to 1 hour
  21. Use shorter time if peaches were very ripe & juicy
  22. The peaches should be tender, juices bubbling all around and the top nicely browned
  23. If peaches seem done, but topping is still pale, place under the broiler for a minute or two
  24. Serve warm & enjoy!!
