Southern Beer Joint Pickled Eggs

Ingredients:

  • 24 eggs
  • 1/2 tbsp mace
  • 1/2 tbsp coriander seed
  • 1/2 tbsp cardamom seed
  • 1/2 tbsp clove
  • 10 small hot red peppers
  • 3 tbsp sugar

Directions:

  1. Cook eggs in simmering water for 15 minutes.
  2. Place eggs in cold water and remove shells.
  3. Pack into sterilized jars.
  4. In a kettle combine vinegar, spices and sugar.
  5. Bring to boil, reduce heat and simmer for 5 minutes.
  6. Pour hot liquid over hard boiled eggs.
  7. Place lid on jar and store in refrigerator when cooled.
  8. Use within a month.
