Simple Summer Potatoes

Ingredients:

  • smaller new potatoes-i use white ones or yukon gold but the little red ones are nice too-just make sure that they are all the same size
  • oil

Directions:

  1. Scrub the potatoes well and put them into a saucepan of cold water along with some table salt. Bring it to the boil and cook till the pototoes are just tender and drain. This can be done earlier in the day.
  2. Melt equal parts butter and oil in a large saute pan (the amounts depend on how many potatoes you are making-for 4 people a couple of tablespoons each should be sufficient) and heat till bubbly. Cut the potatoes into 1/4's and place into the pan with the hot oil. Cook over medium or medium low heat till they start to get crusty on the bottom and then start to turn them in the hot oil. Season to taste with the salt and spices and continue cooking until they are nice and brown and crust.
