Simple But Delicious Cucumber Salad

Ingredients:

Directions:

  1. Peel cucumbers
  2. Cut in half vertically
  3. Scrape out seeds from center
  4. Cut each half into long sections and cut each section into uniform sized cubes
  5. Place cucumber cubes in bowl
  6. Add enough extra virgin olive oil to barely cover
  7. Add the minced garlic
  8. Salt and pepper to tadte
  9. Serve as is or let chill for flavors to blend
  10. This is a great side for gtilled meats , fish and poultry
