Ingredients:

  • 1 medium shallot, minced
  • 2/3 cup kosher salt

Directions:

  1. Mix the salt and shallot and allow to sit covered with plastic wrap for 3-5 days until completely dry.
  2. Stir once daily.
  3. Grind up with a coffee grinder or mortar and pestle until you have a fine grained and well-mixed seasoning.
  4. Dehydrated foods and salts LOVE to reabsorb moisture so remember to store in an airtight jar to prevent your home's ambient humidity from ruining all your hard work.
