pecan pies of today bare little resemblance to their 19th... and8 Morepecan pies of today bare little resemblance to their 19th-century inspiration. could we recreate a traditional pecan pie without using modern day, processed corn syrup here s what we discovered, test kitchen discoveries, many traditional syrups (cane, sorghum) produced a great pie, but we had to mail away for them. in the end, combining maple syrup with brown sugar and molasses replicated the old-fashioned versions perfectly., start the pie at 450 degrees and then drop down the temperature to 325 degrees to ensure the bottom crust is crisp and golden brown., if you don tsp let your pie completely cool , the filling won tsp firm to the proper consistency and the pie won tsp slice nicely., a last-minute addition of cream yielded a welcome custardy transformation to the filling. this also made the filling looser; a problem easily solved by adding extra egg yolks., toasting the nuts before they went into the pie gave them enough crunch and flavor to hold their own in the filling., move over , karo, before cloying karo syrup monopolized the market , pies were made with many other, less processed types of syrup, including sorghum (made from a cereal grass) and cane (made from the boiled-down juice of the sugarcane plant). these syrups still exist, and you can mail-serving them, but otherwise you ll probably need to travel to places like louisiana or kentucky to find them. we tasted a range of such syrups, including steen s 100% pure cane syrup and townsend s sweet sorghum, then tried to duplicate their complex flavors from products we could buy at the supermarket. in the end, a combination of three ordinary sweeteners created an old-fashioned flavor that easily bested karo.1 hour , 9 ingredients

Manhattan Clam Chowder Italian Stylesized hard-shell clams provide the flavor for the broth a... and17 Moresized hard-shell clams provide the flavor for the broth and the tender clam meat for this hearty soup. this rendition is not like the traditional commercial offerings with a thick broth that resembles tomato sauce. instead, the broth is briny and clean tasting, flavors from the sea standing out and tomatoes and vegetables offering dimension in flavors and colors. the potatoes provide substance, and cooking them before adding the tomatoes enables their starch to be released into the broth, lightly thickening it. this soup will hold for two days. reheat over a low flame, being sure not to boil the chowder, which will toughen the clams., clams , medium-sized hard-shell , such as cherrystones, washed and scrubbed clean, pancetta , finely chopped, spanish onion , chopped small, red bell pepper , stemmed, seeded, and chopped small, carrot , chopped small, stalk celery , chopped small, garlic cloves , minced, dried oregano, fennel seeds, hot red pepper flakes, dry white wine, clam juice, yukon gold potatoes , peeled and cut into 1/4-inch dice, bay leaf, diced tomatoes, salt and ground black pepper, fresh parsley leaves , chopped40 min, 18 ingredients

Chicken And Sausage Gumbobutter (also have a couple of tbsp of olive oil on hand j... and22 Morebutter (also have a couple of tbsp of olive oil on hand just in case you need it), flour, chopped onions, chopped bell pepper, chopped celery, chopped green onions, bay leaves, tb chopped garlic, tb chopped parsley leaves, smoked sausage , such as andouille or kielbasa, cut into 1/4 inch slices., chicken , cut into 1 inch cubes. (you can use either half white, half dark or all dark. i like boneless, skinless because it s easier), ham steak, cut into 1/2 inch cubes, broth or stock (i like to use 1/2 chicken and 1/2 beef, just to give it some richness.), spices: (best to use dried herbs for this), thyme, basil, oregano, onion powder, black pepper, white pepper, cayenne pepper (even this little amount makes it a little on the spicy side, right on the back of your tongue. if you d rather it not that spicy, just add 1/2 to 3/4 tsp), chili powder, recipe calls for 5 tsp of salt, but i usually hold off on salt until the end since the ham, the sausage and the broth usually have a lot of salt, depending on what brands you use)23 ingredients
