Roasted Tomatoes on Goat Cheese

Ingredients:

Directions:

  1. Preheat oven to 450°F.
  2. Toss halved tomatoes & sliced shallots with olive oil.
  3. Arrange in a single layer on parchment paper on a sheet pan.
  4. Roast in centre of oven for about 10 minutes or until it begins to caramelize.
  5. Season with salt and pepper to taste and let cool.
  6. To make balsamic glaze pour vinegar into a small saucepan and bring to a boil.
  7. Lower heat and simmer for 5 minutes.
  8. Stir in remaining ingredients and simmer for 2-3 minutes.
  9. Cool and strain into a covered container and place in a cool, dark cupboard where it will keep indefinitely.
  10. Makes 1/2 a cup.
  11. To serve place cheese logs on a dish.
  12. Top with tomatoes, even warm if you so choose.
  13. Drizzle with balsamic glaze.
  14. Garnish with herbs.
  15. Serve with toasted baguette slices or crackers.
