Roasted Sweet Potato Sticks

Ingredients:

  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 6 slender sweet potatoes, peeled and sliced into sticks

Directions:

  1. Preheat Oven to 400 degrees
  2. Spray a baking sheet with cooking spray or vegetable oil
  3. In a large bowl, mix oil, vinegar and paprika
  4. Add sweet potato quarters and stir by hand to coat each completely
  5. Place potato quarters on prepared baking sheet and bake for 40 minutes.
