Directions:

  1. Heat the butter in a large heavy skillet until it is foaming.
  2. Add the onion quarters in quantities that fit easily in the pan.
  3. Toss the onions over moderate heat until well coated on all sides.
  4. Transfer to a shallow baking dish.
  5. Sprinkle the onions with salt and pepper.
  6. Bake in a preheated 350 degree F oven for 1 hour and 15 minutes, turning the onion every 20 minutes during roasting.
