Risotto - Eatcleandiet Recipe

Ingredients:

  • 2 cups arborio rice
  • 2 cups zucchini
  • 1 cup onion
  • 1 lb scallops

Directions:

  1. Saute red pepper
  2. Saute onion
  3. Add rice
  4. Add broth 1 cup at a time till absorbed (approx 20 min)
  5. Saute zucchini and onion
  6. Puree in blender
  7. Mix puree into rice, add red pepper and sauteed scallops
