Rich Chocolate Liqueur Mousse

Ingredients:

Directions:

  1. Melt the chocolate slowly in a bowl set over some simmering water. Allow to cool a little before using
  2. Separate the eggs into two large, very clean bowls
  3. Whisk the egg whites until they form soft peaks
  4. Whisk the egg yolks and liqueur until pale and frothy
  5. Quickly pour the melted chocolate into the yolks and whisk to combine
  6. Add a large spoonful of whisked egg-white to the yolk mixture and stir briefly with a ballon whisk
  7. Add the rest of the egg-white and again stir briefly with the balloon whisk
  8. Pour the mixture into 4 small ramekin dishes and chill until required
