Raspberry Upside Down Cake

Ingredients:

  • 2/3 cup sugar
  • 3 eggs
  • 2 cups flour
  • 1 tbsp lemon juice
  • 1 pinch salt
  • 2/3 cup milk

Directions:

  1. Coat a 9 square baking pan with cooking spray.
  2. Spread half the raspberries along the bottom of the pan.
  3. Combine butter, sugar, eggs, flour, lemon juice, vanilla essence, baking powder, salt and milk.
  4. Mix well.
  5. Fold in the other half of the raspberries.
  6. Pour over raspberries in the pan.
  7. Bake for 45 minutes at 350 deg F.
  8. Allow to cool.
  9. Invert cake on a platter.
  10. Sprinkle with powdered sugar.
  11. Slice and serve!
