Quinoa with Cranberries, Raisins, and Almonds

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1/2 cup raisins
  • 4 tsp slivered almonds, raw
  • 4 tsp cinnamon

Directions:

  1. Place 1 cup rinsed quinoa in pot with water.
  2. Add raisins, cranberries, and one teaspoon cinnamon.
  3. Cover, and bring to a boil.
  4. Boil for about 1 minute, stirring.
  5. Reduce heat to low, cover, and let simmer until all the liquid is absorbed.
  6. Divide into 4 servings,
  7. Sprinkle each serving with cinnamon, and 1T almonds.
  8. NOTE:
  9. Can be made ahead, and stored in the fridge for several days, if needed. Wait to add nuts until ready to eat. Reheat in the microwave, then sprinkle with cinnamon.
  10. Uts and psrinkle with cinnamon.
