Ingredients:

  • 6 large eggs
  • 14 1/2 oz potatoes
  • 1 small onion
  • 1 tsp garlic
  • 2 tbsp 1% milk

Directions:

  1. Heat oil in oven safe skillet.
  2. In separate bowl mix eggs, milk, and shredded cheese.
  3. Add chopped onion and garlic to oil. Heat until light brown.
  4. Add potatoes and heat until light brown.
  5. Add eggs and cook for 3-4 minutes until bottom is stiff.
  6. Place into broiler and heat for another 3-4 minutes or until top is cooked and golden brown.
  7. Slice into 8 slices and serve.
