Poached Seafood in Lime Coconut Dressing

Ingredients:

Directions:

  1. Poach the seafood in the stock.
  2. This will only take one or two minutes.
  3. Remove the seafood and chill quickly to stop further cooking.
  4. You can do this by placing the seafood in ice water for a few minutes.
  5. Discard the stock.
  6. Combine the remaining ingredients, except the lettuce, to form a dressing.
  7. Drain the seafood from the water and add to the dressing.
  8. Cover and marinate in the fridge for at least 4 hours.
  9. To serve place the lettuce in the base of each serving bowl and pile over the seafood and dressing.
  10. Serve immediately.
