Ingredients:

  • 2 cup finely chopped pistachios
  • 1/4 cup honey
  • 1/4 cup butter
  • 1/2 tsp salt
  • 11/2 cup cold butter
  • 1/2 cup ice water
  • 1 cup sifted icing sugar
  • 1/2 tsp vanilla

Directions:

  1. Filling: Melt butter, stir in honey and sugar then pistachio's. Set aside
  2. Pastry: Sift together flour and salt. Cut in butter until fine and crumbly. Add ice water and stir with a fork until just mixed. Form into a ball, cover with cling wrap. Chill about 1 hour.
  3. Roll dough very thin, cut with a medium round fluted cookie cutter. Place a small amount of pistachio filling onto each pastry circle. Brush edges with water. Fold over and press together.
  4. Bake at 375F until lightly golden, about 12 minutes.
  5. Glaze: Mix icing sugar and enough milk to make a thin glaze, add vanilla. Drizzle over slightly warm pastries.
