Pigs in a Blanket.  2 Meatball Serving = 288 Cals

Ingredients:

  • 1 1/2 lb hamburger
  • 2 lb cabbage
  • 1/4 cup rice
  • 1/2 small onion
  • 1 tsp salt
  • 1 pepper to taste

Directions:

  1. Remove about 14 whole leaves from cabbage and boil until soft. Cool
  2. Mix soup with equal part water.
  3. Mix rice, onion, hamburger, salt, and (pepper to taste)
  4. Form meatballs (about .25 cup each of mixture)
  5. Wrap each meatball in a cabbage leaf and place in roaster.
  6. Slice any remaining cabbage into .25 inch slices and lay on top.
  7. Slice green pepper and place among meatballs.
  8. Pour tomato soup over all.
  9. Bake at 350 degrees for two hours.
