Peteys Birthday Cherry-chocolate Bundt Cake

Ingredients:

Directions:

  1. Grease and flour a 10-12 cup Bundt pan.
  2. Heat oven to 350 degrees F
  3. Melt butter in a large saucepan over medium-low heat.
  4. Add cocoa, stirring until smooth.
  5. Whisk in the water and remove from heat.
  6. To the warm cocoa mixture, add the sugar, sour cream, vanilla and eggs.
  7. Whisk until smooth.
  8. In another bowl combine the flour, soda and salt.
  9. Add all at once to the first mixture, whisking until well blended.
  10. Stir in one can of cherry pie filling.
  11. Pour the batter into the prepared pan.
  12. Bake for 1 hour, or until it feels firm to the touch and has slightly pulled away from the sides of the pan.
  13. Cool in pan on a rack for 20 minutes.
  14. Carefully loosen the cake with a knife and invert onto a large plate.
  15. While it is cooling, warm the milk/cream ,coffee, and corn syrup on medium heat until it boils.
  16. Add vanilla.
  17. Pour over chocolate chips and let sit until chocolate melts.
  18. Whisk until smooth.
  19. Let cool to room temperature then spoon over the cooled cake.
  20. If too thick, thin with a little more milk/cream.
