Ingredients:

  • 8 large ripe tomatoes
  • 1/2 stick butter

Directions:

  1. Cut or break peppers in rather large pieces and saute in butter until slightly soft and they startto brown.
  2. Use a large heavy skillet. peel tomatoes, cut in large peices and add to peppers. cook, uncovered, about 30 minutes or until the juices have thickened. add seasonings, i usesalt and pepper
  3. And creole, a sprinkling of crushed red peppers and a fourth of a teaspoon of sugar
  4. This is a wonderful side dish to use with most meat dishes, and is good the next day
