Ingredients:

  • 2 large eggs
  • 1 cup water
  • 2 tbsp. crisco
  • cooking spray
  • filling
  • 1 (8oz.) package cream cheese, softened
  • 1 cup pwdered sugar
  • topping
  • 1 tbsp. butter
  • 1/2 tsp. almond extract
  • whipped cream

Directions:

  1. Place eggs, water and oil into blender. Cover and process pulsing several times. Add pancake mix. Process until smooth.
  2. Spray 10 inch nonstick skillet with no-stick spray. Heat pan over med. heat. Pour 3 to 4 Tbsp. of batter into preheated skillet, immediately start tilting the pan until batter covers bottom. Cook until edges start to to dry and center is set. Turn to brown other side. Turn crepes onto plate and repeat with remaining batter.
  3. Beat cream cheese,powdered sugar, and 1 tsp. almond extract. In a seperate bowl combine peach preserves,butter and1/2 tsp. of almond extract. Microwave on high 30 seconds or until melted.
  4. Divide cream cheese mixture evenly between all 8 crepes,spreading the cheese over two crepes on each dessert plate. Just before serving,top before before serving,top with peach preserves mixture,almonds and whipped cream.
