Pan Seared White Wine Salmon

Ingredients:

  • 1 to 1 1/2 lbs fresh salmon
  • 1/4 tsp salt
  • 1/2 tsp course black pepper
  • 1/2 tsp paprika
  • 1/2 tsp basil
  • 1/4 tsp dill weed
  • 3/4 stick butter
  • 1 tblsp lemon juice
  • 1/4 cup white wine
  • 2 tblsp olive oil
  • (optinal for a sweeter tasting salmon, also add brown sugar to taste in sauce)

Directions:

  1. Heat olive oil in skillet until almost smoking. Sprinkle salt and pepper on fillets and sear on both sides for 2 to 3 minutes until darkened.
  2. Melt butter in small sauce pan and add wine, lemon juice and remaining dry spices. Remove salmon from skillet and place on a plate and pour sauce over all. Enjoy!!
  3. This can also be done on the grill by coating the fillets with olive oil, sprinkling dry ingredients on fillets while on grill and use butter, wine and dry ingredients for sauce too. Takes 2 to 3 minutes per side.
