Ingredients:

  • 1/2 - cup plus 2 tbsp finely chopped shallots
  • 1/2 cup (scant or about 7 tbsp cassava flour or potato flour)
  • 1 - kilo fresh oyster, shelled (make about 150 g shelled oysters)
  • 1-2 - tbsp water
  • 1/4 - cup soy sauce
  • 1 - tbsp farlic chili sauce

Directions:

  1. In a skillet, heat 3 tablespoons of the corn oil and saute shallots until almost transparent; set aside.
  2. In a deep bowl, combine shallots, cassava flour or potato flour and oyster. Mix throughly. Add a little water if necessary to make a thick batter.
  3. Shape into small round fritters
  4. In a nonstick skillet, heat remaining oil. Fry fritters on moderate heat, turning over to cook evenly. Repeat the process until all the oyster batter has been cooked, adding more oil if necessary. Drain on paper towels and transfer to platter.
  5. Mix dipping sauce ingredients and serve with oyster fritters.
