  1. Preheat oven to 350 degrees.
  2. Line cupcake tins with paper liners.
  3. Melt the chocolate in a double boiler or in the microwave.
  4. Pour the melted chocolate into a large mixing bowl. Blend in the mayonnaise, vinegar and vanilla. Combine the flour, sugar, baking soda, and salt and gradually stir into the chocolate mixture. Slowly stir in the warm water. Pour batter into the prepared cups until half full.
  5. Beat cream cheese, powdered sugar, *limeade concentrate and vanilla in a large bowl with the electric mixer at a medium speed until well blended. Tint with yellow food coloring and beat until well blended. Spoon 1 rounded tsp of the cream cheese mixture into the center of each cup. Fill in the remaining portions of the cups with the rest of the chocolate batter.
  6. Bake in the preheated oven for 30 to 35 minutes or until a toothpick inserted into the center of the cake comes out clean.
  7. *Frozen limeade concentrate couldn't be inputted into the recipe. Let it thaw and use 1/3 cup (2.6 fl oz) for entire recipe. Approx 150 calories for entire recipe, 6.25 calories per serving.
