Old Fashioned Partridge

Ingredients:

  • 4 partridge breasts
  • 4 large onions
  • 1/2 lb peas
  • 1 glass white wine
  • 1/2 cup olive oil
  • 1 tbsp lard
  • 1 cup stock ( chicken)
  • salt and pepper

Directions:

  1. Fry all ingredients except potatoes, wine and stock.
  2. Place in a casserole and gently cook for 1/4 an hour.
  3. Add wine and broth and cook until tender.
  4. Add potatoes and serve with vegetables of your choice.
  5. Use the liquid to make a sauce and pour over partridges.
