Old-fashioned Burnt Sugar Caramel Pie

Ingredients:

  • 1 1/2 cups sugar, divided
  • 3 heaping tbsp. flour (or 4, to be safe)
  • 2 cups milk
  • 1 tsp. vanilla

Directions:

  1. Caramelize 3/4 c. sugar, stirring until it's melted and a nice caramel color. Set aside.
  2. Combine remaining 3/4 c. sugar, flour, egg yolks, and whisk in milk gradually until mixture is smooth.
  3. Cook over medium heat, stirring constantly until mixture thickens.
  4. Add the caramelized sugar, and stir like crazy!
  5. It will lump up, but it WILL melt and the mixture will be smooth again.
  6. Continue to cook and stir until smooth and very thick.
  7. Add vanilla, and a pat of butter, if you'd like.
  8. Pour into a baked 9 inch pie crust.
  9. Make meringue out of the egg whites, adding sugar to taste, and spread on top of pie. Bake until light brown.
  10. OR just forgo the meringue, and use whipped cream or whipped topping.
