Ingredients:

  • 1/4 cup of soft butter
  • 1/2 cup of sugar
  • 1 egg
  • 1/4 tsp of almond extract
  • 1 cup of finely chopped salted peanuts
  • 5 cups of corn flakes

Directions:

  1. Beat butter and sugar until light and fluffy. Add egg and almond flavoring, beat well. Stir in peanuts and cornflakes until thoroughly combined.
  2. Drop by leve teablespoons onto well greased baking sheets.
  3. Misture is somewhat dry in appearance behfore baking.
  4. Resist the urge to add extra liquid.
  5. Bake in moderate oven 350 degrees about 12 minutes per pan.
  6. When you remove the baking sheet from oven, place on hot wet towel. (it helps the cookies release) Immediately remove cookies and cool on a wire rack. (four dozen cookies about)
