Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1/8 tsp salt
  • 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 7 oz honey
  • 2 eggs
  • 2 tsp vanilla
  • 1/4 cup oil
  • 1 1/4 cups zucchini, grated
  • 1 tbsp cream cheese
  • 1/2 cup confectioners' sugar
  • 1 1/4 tsp orange juice

Directions:

  1. Bread:.
  2. Preheat oven to 350°F.
  3. Combine flour, salt, baking soda, cinnamon and 1 tablespoon orange zest; than mix in honey, eggs, vanilla and oil.
  4. Stir in zucchini and walnuts; pour into a greased loaf pan.
  5. Bake for one hour or till tooth pick comes out clean.
  6. Let cool 10 minutes in pan before turning out.
  7. Glaze:.
  8. In mini mixer beat cream cheese, confection sugar, orange juice and orange zest until well blended and smooth.
  9. Drizzle glaze over top of slightly warm bread allowing to run down sides. Allow to finish cooling before slicing.
