No-cook Ice Cream

Ingredients:

  • 6 eggs whole (you could probably use equal amount of egg substitute.)
  • 3 tbsp vanilla
  • 1 1/2 quarts half and half
  • 1 1/2 cups sugar
  • dash of salt

Directions:

  1. Combine the eggs, vanilla, half & half,
  2. Add pudding mix, sugar and salt.
  3. Beat welll with an electric mixer until all ingredients are well blended.
  4. Pour into ice cream freezer container and follow makers instructions.
  5. The flavor of pudding is up to the cook.
  6. Some excellent successes have been French Vanilla, double dark chocolate and pistachio. However, banna with mashed fresh banana and walnuts is good. Lemon is good, substituting lemon flavoring for vanilla. Butterscotch with pecans... Coconut .... let your imagination run wild!
