New Orleans Shrimp Okra And Tomato Saute

Ingredients:

Directions:

  1. Toss shrimp and 1 1/2 tsp Cajun seasoning in med bowl to coat
  2. Cook bacon in large non stick skillet over med-high heat
  3. Until crisp and brown
  4. Using slotted spoon,transfer bacon to papertowel to drain.
  5. Add flour ro drippings in skillet,stir constantly till roux is very dark brown,about 5 min
  6. Add okra and cherry tomatoes,stir in remaining 1 1/2 tsp Cajun seasoning cook 1 min.
  7. Add clam juice and all spice
  8. Boil until saauce is thick,stirring often,about 3 min
  9. Add shrimp.
  10. Saute shrimp until opaque in center about 5 min
  11. Season to taste with salt and pepper
  12. Mix in choped green onions and cooked bacon
  13. Serve
