Mushroom Potato Casserole

Ingredients:

  • 1 tbsp flour
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 4 -5 medium potatoes (sliced )
  • 3 tbsp butter
  • 1 cup milk
  • 1 tbsp parsley

Directions:

  1. Heat oil in a skillet and sauté mushrooms until tender-set aside.
  2. In a small bowl combine flour, salt and pepper.
  3. Cover the bottom of greased 1 1/2 Qt baking dish with a layer of potatoes.
  4. Sprinkle with flour mixture.
  5. Add a layer of mushrooms.
  6. Sprinkle with a layer of Parmesan cheese.
  7. Dot with butter.
  8. Repeat layers until all ingredients are used.
  9. Pour milk over all.
  10. Cover and bake in a 375º oven for 45 minutes.
  11. Remove cover and bake until potatoes are tender and browned, about 30 minutes.
  12. Sprinkle with parsley.
